Plant Milk: Used to soften the polenta.

Agave: Gives a hint of sweetness just like traditional butter.

Salt: Your polenta may come pre-salted so you may not need any, adjust to taste.

For European Style Butter:

Ingredients

  • 1/2 cup of cooked polenta (I use pre-made)

  • 1 tbsp of plant milk

  • 1/4 tsp of nutritional yeast

  • 1/4 tsp of agave (or sub maple syrup)

  • Salt to taste

  • For European Style Butter, also add:
  • 1/2 tsp of lemon

  • 1 tsp of almond flower

Directions

  • Blend the Ingredients: Add all of the ingredients to a small high-speed blender, food processor, or immersion blender cup. If you only have full-sized appliances, you may need to double or triple the recipe to ensure proper blending. The key is to blend until the mixture becomes smooth and creamy.
  • Enjoy Your Fat-Free Butter: Once your fat-free butter is blended, you’re all set to slather it on your favorite foods! Use it as a spread on bread, toast, bagels, and your favorite veggies!

Notes

  • Serving Size: This recipe makes 6-8 one-tbsp servings.
  • Uses: As this butter alternative has very minimal amounts of fat it will not be suitable for frying or baking. This butter-like spread is a great topping for veggies, baked goods, and whatever else you want to slather a chunk of butter on!
  • Storage: You can store your fat-free polenta butter in an airtight container in the refrigerator for up to 4 days. It will firm up slightly when chilled and melt a bit when warmed.
  • Customize Your Butter: The great thing about this recipe is its versatility. Feel free to get creative by adding herbs, spices, or other seasonings to customize your fat-free polenta butter to suit your taste preferences. Try adding minced garlic and fresh herbs for a savory twist or a dash of cinnamon and extra syrup for a sweet variation.
