As a result, it offers a neutral flavor profile, serving as a versatile canvas for various toppings. Initially firm like a brick straight out of the package, its texture transforms to a soft consistency when cooked. Kiri Mochi is readily available for purchase in Japanese and Asian markets, as well as online platforms. Crucially, it serves as an essential ingredient in crafting mochi chips.

How To Make:

To prepare mochi chips, begin by heating a medium-sized non-stick pan over medium heat. Place the mochi upright on the edge of the pan, gripping it firmly from the top, and press it into the pan. As the mochi begins to melt, use a chopstick to secure the melted portion near the rim of the pan while dragging the mochi across the surface. Swiftly pull the mochi away when nearing the opposite edge for a clean break. Carefully transfer the chip from the pan to a flat surface to cool.

Once the mochi melts down too far to safely grip, lay it flat in the pan and use a fork to drag it across, creating more chips.. Once prepared, enjoy the chips immediately, either as a garnish or paired with sweet or savory toppings. For storage, ensure the chips are placed between parchment paper layers in an airtight container, extending their freshness for up to 5 days.

Ingredients

  • 2 pieces of kiri mochi

  • Desired toppings (see notes for suggestions)

Directions

  • Heat a medium-sized non-stick pan over medium heat.
  • Place the mochi standing upright on the edge of the pan. Grip the mochi from the top and press it firmly into the pan. As the mochi starts to melt, use a chopstick to hold the melted portion near the rim of the pan down while firmly dragging the mochi across the surface. When you’re close to the opposite edge of the pan, swiftly pull the mochi away for a clean break. Carefully transfer the chip from the pan to a flat surface to cool.
  • Once the mochi melts down too far to safely grip, lay it flat in the pan and use a fork to drag it across, creating more chips.
  • Enjoy immediately as a garnish or with sweet or savory toppings. For storage,  place the chips between parchment paper and store them in an airtight container for up to 5 days. 

Notes

  • Please be extremely cautious when making mochi chips. Mochi chips take a steady hand to make and a minor mishap could lead to a burn. Heat-resistant gloves are recommended and discretion is advised. 
  • Toppings: Mochi chips pair well with sweet and savory toppings. A drizzle of syrup, chocolate, or hot sauce makes for a great topping as well as powdered sugar, pulverized freeze-dried fruit, Kinako, or your favorite seasonings.
